Paleo Chicken Nuggets

Everyone loves chicken nuggets. They're simple, easy to find, cheap and mmm... so delicious that it's unsurprising that they are the average American kid's go-to. But what exactly is in your chicken nugget?

Long story short, the best chicken nuggets are the ones you make yourself. With this recipe, you can be sure of the ingredients in your favorite dinner and enjoy them guilt-free! 

Chicken Nuggets (Paleo, Dairy, Gluten and Refined Sugar-Free)

1 lb boneless and skinless chicken breasts, cut into strips or small pieces (Please try and buy organic- worth it!) 
1 cup almond flour
1 cup shredded unsweetened coconut
1 egg
3/4 tsp paprika
1/2 tsp cumin
1/2 tsp onion powder
1/2 tsp garlic powder
Salt and pepper to season


1. Preheat oven to 375 degrees and line a cookie sheet with parchment paper.

2. Lay out the chicken strips and season both sides with the paprika, cumin, onion and garlic powder, salt and pepper.

3. In a small bowl whisk the egg.

4. In another bowl, combine the almond flour and the shredded coconut to make a mixture.

5. Take each piece of seasoned chicken; dip it in the egg, and then the coconut mixture, making sure all pieces are well coated.

6. Lay each piece on your parchment lined cookie sheet and bake for 15-20 minutes. Or if you're really craving that 'fried' texture then you can simply fry them using coconut oil in a skillet!
